[المكرونة المبوخة] من مطبخ ام عائشة [الأرشيف]

السلام عليكم ورحمة الله وبركاته

المكرونة المبوخة ( الشعيرية المبوخة ) بالخضار

اكلة جديدة وشهية ورائعة وتصلح للمناسبات
جربوها وانا متأكدة انكن حتدعيلي عليها

نبدا على بركة الله تعالي

المقادير

اولا مرقة المكرونة

بصلة مقطعة الى اربعة
طماطمة مقطعة الى اربعة
زيت
ملح
بهارات وكما هي في الصورة
( حبهان - قرنفل - فلفل اسود - فلفل ابيض - عود اللحم - ورق غار - زنجيبل)
اللحم ( يمكن استعمال الدجاج او الخروف )
انا استخدمت الدجاج (نصف دجاجة)
كمية من الماء
نص كيلو مكرونة الشعيرية - زيت

ثانيا الصلصة
زيت
ثوم مهروسة
ملعقة طماطم معجون

ثالثا مقادير خضار المكرونة
علبة ذرة
علبة فطر (مشروم)
علبة فاصولياء حمراء
شرائح زيتون اخشر او اسود
شرائح فلفل رومي
شرائح جزر
شرائح بصلتين
ربطة كسبر صغيرة

الطــــــــــــــريقــــــــــة
متسلسلة كما في الصور

نضع المقادير في الطنجرة
1- البصل والطماطم
2- الزيت
3- الملح
4- البهارات
5- نضع عليها الماء وترفع على النار الى بدء الغليان

كما في الصورة التالية

ثم

1- نقوم بأخذ المكرونة الشعيرية
2- نضع كمية من الزيت عليها ثم نقوم بتحريكها
3- نضعها في طنجرة الكسكاس وتوضع على النار فوق المرقة
وتترك لمدة ربع ساعة
4- ثم نقوم بوضع عليها كمية من ماء المرقة وتحريك المكرونة حتى لا تتعجن
ونقوم بتكرار الخطوة الى ان يتم نضج المكرونة والتي لا تستغرق اكثر من ساعة

ثم

في هذه الاثناء نقوم بتجهيز الصلصة
وهي بسيطة جدا
1- نضع الزيت في الطنجرة ونضع عليه ملعقة من معجون الطماطم وفصين ثوم مهروس
2- توضع على النار مع التحريك
3- نضع عليها كمية قليلة من ماء المرقة السابقة وتغلق الطنجرة وتترك على نار هادئة

ثم

ثانيا تحضير خلطة الخضار

1- علبة ذرة
2- شرائح زيتون (اسود او اخضر )
3- علبة فطر ( المشروم )
4- شرائح فلفل اخضر حلو (فلفل رومي)
5- شرائح من الجزر

كما في الصورة التالية

ثم

ناخذ شرائح الجزر والفلفل
ونقوم بقليها في الزيت الى ان تتحمر وتترك جانبا الى حين استخدامها

كما في الصورة التالية

ثم
نعود الان الى المكرونة

بعد ان نضجت المكرونة نقوم بسكبها في صحن كبير وعميق
ونقوم بوضع الصلصة عليها
وتوزيعها وتحريكها جيدا

كما في الصورة التالية

بالنسبة اللي فأنا لم اكثر من الصلصة لاني احبها مائلة للحمرة ولهذا هي في الصورة غير واضحة
ولكن يمكنكي ان تزيدي من كمية الصلصة اذا اردتيها حمراء اللون

ثم
باقي الخطوات لتحضير المكرونة
1- نقوم باحضار بصلتين وقصهم الى شرائح اجنحة
2- نأخذ اللحم اللي موجود في المرقة سواء لحم خروف او دجاج
ونقوم بتفتيته باليد الى قطع صغيرة
كما في الصورة
3- نضع بعض قطرات الزيت على النار ونضيف اليها البصل الشرائح
يترك على النار الى ان يذبل وليس الى ان يتحمر
4- نقوم باضافة قطع الدجاج الى البصل
ويترك الى ان يعطي اللون الاشقر وليس الى الاحمرار
5- نقوم بوضع البصل والدجاج على المكرونة السابقة

ثم

باقي الخطوات بالصور

1- نحضر باقي المقادير السابقة
الذرة والفطر والزيتون والجزر والفلفل المقلي
2- نقوم بوضع المقادير على المكرونة
3- نقوم بفرم ربطة صغيرة من الكسبر
4- نضع الكسبر على المكرونة وباقي المقادير
5- نقوم بخلط المقادير مع بعضها البعض جيدا

ملاحظة
1-انا لم استخدم الفاصولياء الحمراء
لانها لم تكن موجودة لدي
ولكنها جزء مهم في الطبق ويعطي نكهة خاصة
2- كمية الصلصة اللي درتها قليلة
لاني افضلها باللون الاحمر الخفيف جدا
ولكن اصول الطبخة ان تكون حمراء اللون الداكن

اتمنى ان تجربوها وتعطوني رايكم بيها
