سلطة الباذنجان المشوي باللحمة

المقادير:

- باذنجان كبير لسهولة الشوي
- فص ثوم كبير .
ويمكن استبداله ببودرة الثوم ..
- ملعقة كبيرة طحينية .
- ملعقة مايونيز .
- عصير ليمونة .
- ملعقة سمن .
- ملعقتين صنوبر .
- لحم مفروم خشن .
- ملعقة ونصف كبيرة صلصة الطماطم .
- ملح وفلفل اسود وشوية كمون.



الطريقة ...



نشوي الباذنجان على النار مباشرة ونقلبه باستمرار على جميع جهاته حتى ينضج .

نضعه جانبا حتى يبرد

نقشر الباذنجان حتى لايبقى اثر للقشر المحروق .

نضعه في صحن عميق ونهرسه بواسطة الملعقة الخاصة بالهرس او الشوكة .


ندق فص الثوم بمدقة الثوم مع ملعقة صغيرة من الملح ثم نضيفه الى الباذنجان .
او يمكن استبداله ببودرة الثوم كما فعلت انا ...

ونضيف الطحينية والمايونيز ونخلط حتى تمتزج المكونات جيدا.

ونضيف عصير الليمونة ونخلط حتى تمتزج المكونات جيدا.

في مقلاة نضع حوالي ملعقة كبيرة من السمن

ثم نقلب فيها الصنوبر حتى يصبح ذهبي اللون

نضيف اللحم ونقلب حتى يتغير لون اللحم ويخرج مائه .

نضيف صلصة الطماطم الى اللحمة ..

والقليل من الماء للترقيق ونضيف ملح والحرارات والكمون على حسب الرغبة

ندع الجميع على نار هادئة حتى تختر الصلصة عندها نطفىء النار ..

وعلى الفور نضع الباذنجان في صحن التقديم ونسكب على وجهه مزيج اللحمة الساخنة .

عند تقديم هذا الطبق لابد ان تكون اللحمة ساخنة

سوف تجدين الثوم البودرة وكذلك البصل البوردة
في محلات المواد الغذائية الكبيرة (المجمع التجاري)
او عند محلات العطارة ..
انتي وين تسكني وانا توا انقولك وين تلقيها ...
وعندك مثلا ..
في طرابلس في سوق الثلاثاء
في مصراتة في سوق القرضابية
في البيضاء في سوق لؤلؤة التجاري
في درنة محلات ابوشرتيلة
في سبها في محلات ابناء المازق
وهذه المحلات في هذه المدن تعتبر من افضل الاسواق
السبب ... لانها توفر اغلب المواد المستخدمة في الطبخ والغير موجودة في الاماكن الاخرى
