[الدجاج التندوري الهندي] من مطبخ ام عائشة [الأرشيف]

الدجاج التندوري

دجاج التندوري له عشاق كثيرون وهو طبق واسع الصيت على امتداد العالم وايضا هو طبق اساسي في المطاعم الهندية والمطاعم الغربية والعربية .
اليوم سأعده لكم بطريقة تتناسب مع الاكل الليبي ...

المقادير:
* عدد خمسة افخاذ دجاج كاملة .
* كوب من الزبادي .
* عصير ليمونة .
* فصين ثوم مهروسين .
* ملعقتين كبيرتين من الزنجبيل الطازج المبشور .
* ربع ملعقة صغيرة زنجبيل بودرة .
* قرن فلفل اخضر حار مقطع الى صغير .
* ملعقة ونصف صغيرة بذور الكسبرة الناشفة المطحونة .
* ملعقتين صغيرتين الى ملعقتين ونصف بودرة فلفل احمر حار
* ملعقة صغيرة كمون .
* ملعقتين صغيريتين ملح .
* ملعقة صغيرة قرفة
* ملعقة كبيرة مسحوق الكاري
* ملعقة صغيرة من حب الهيل المطحون و القرنفل مطحون
* ملعقتين كبار طماطم علبة

الطريقة
نخلط جميع ما سبق جيدا في اناء عميق حتى تختلط المواد وتصبح كالصوص الثقيل.

الان نقوم بنزع الجلد عن افخاذ الدجاج ونحدث فيها بواسطة السكين شقوق عرضية من الجهتين

نضع الدجاج في التتبيلة التي اعددناها ليلة كاملة في الثلاجة او اقل شيء مدة ست ساعات حتى يتشرب لحم الدجاج النكهات جيدا ويصل الى حد الاشباع .

نشغل الفرن من الاسفل الى 200 درجة مئوية .
ننشل الدجاج من التتبيلة ونضعه في صينية الشوي (من غير اضافة ماء).
ونوزع مكعبات صغيرة من الزبدة على الدجاج من الاعلى

نحتفظ بالتتبيلة جانبا بحيث نقوم بدهن الدجاج بين الفينة والاخرى بهذه التتبيلة .
نقوم باخراج الصينية من الفرن بين كل فترة ودهن الدجاج بالتتبيلة بواسطة الفرشاة .
حتى ينضج الدجاج تماما وذلك بمرور حوالي الساعة وربع في الفرن

نضع فرشة من الارز في صحن التقديم ونضع فوقها دجاج التندوري ونزين الاطراف بارباع الليمون واوراق الكزبرة الخضراء .
يقدم الى جانب السلطة .
