القــــــــــــــــــــلايا
هذه الطريقة تعتبر من ابسط واسهل واسرع الطرق لاعداد القلايا
او كما يقال لها في الدول العربية ( المعلاق)
المقادير :
معلاق كامل من القصبة الهوائية والرية والكبدة والقلب .
بصلتين متوسطة الحجم مقطع الى صغير.
نصف كوب من زيت الزيتون .
ملعقة الحرارات
ملعقة ملح .
نصف ملعقة صغيرة قرفة.
نصف ملعقة صغيرة فلفل اسود .
نصف ملعقة صغيرة حبهان مطحون .
شرائح ليمون و اوراق من النعناع الاخضر للزينة .
الطريقة:
نقوم بتقطيع جميع المعلاق الى مكعبات من القلب والرئة والكبدة والقصبة الهوائية تقطع الى دوائر ..
نقوم بغسلها جيدا ووضعها في الصفاي لنتخلص من مائها ..
نضع مقدار الزيت في الطنجرة على النار ..
نضيف البصل الى الزيت ونقلب البصل حتى يذبل قليلا
نضيف المعلاق المقطع كاملا ما عدا الكبدة ونقلب حتى يتغير لون القطع .
نضيف ملعقة من الملح و الحرارات وباقي التوابل الى الطنجرة ..
نحرك جيد حتى تتوزع كمية البهار .
نضيف كوب ماء ساخن و ننتظر الى ان تغلي المكونات جيدا ونخفض النار حتى تنشف مائه
عندها نضيف الكبدة ونبقيها ربع ساعة اضافية على النار .
يقدم المعلاق على وجهه شرائح الليمون واوراق النعناع الاخضر .
