مقادير العجينة


4كوب دقيق
4 ملاعق حليب جاف
ملعقة كبيرة لB.p
نص كوب زيت
ملعق كبيرة ونص خميرة خبز
2 ملعقة كبيرة سكر
ملعق ةصغيرةمملؤة ملح
ماء للعجن
نخلط المواد الجافة
ثم نضيف الماء قليلا ثم الزيت ثم نكمل اضافة الماء
الى ان تتماسك
وتوضع فى مكان دافئ
ولابد من كسر العجين مرتين او اكثر
او اى عجينة معتمدتها




الحشوة


لحم دجاج مطبوخ ومفروم_بازلياء مطبوخة حسب طريقتك_جزر مفروم_كمية من البصل_ بهارات+جبن شرائح



تجهيز الحشوة



نفرم البصل شرائح ونضعه فى صاج او صنجرة مع القليل من الزيت الى ان يشقر
ثم نضيف الجزر المبشور ونتركه يتقلى مع البصل 3 دقائق ثم نضيف اللحم ونضع البهارات
ونضيف البازلياء وبعد 5 دقائق نبعد الحشوة عن النار

وبعد ماختمرت العجينة نفردها ونجهز طاجين دائرى وندهنه زيت ونرش الدقيق

ونضع فيه العجينة المفرودة ونحاول احداث ثقوب فيها بالشوكة ونضع فوقها الحشو

وثم نضع الجبنة فى الحليب (طريقة الاخت ام عائشة الله يحفظها)
ونضعها فوق الحشوة
ونفرد عجينة اخرى(لنضعها فوق الفطيرة)
وبعد فرد العجينة نحضر قالب صغير ونشكل به العجينة المفردة
وناخد العجينة بحذرونضعها فوق الحشوة وندهنها صفار بيض وحليب وملعقة خل
ونرشها بالسمسم
