البراونيز مع الفراولــة
طبق لذيذ جدا وخفيف
ومن الشائع تقديمه في الفنادق وبعض المطاعم والكوفي شوب
هذا الطبق شائع اعداده مع الفراولة
ولكن انا عندما حضرت هذا الطبق لم تكن الفراولة نزلت متوفرة في السوق بعد
ولا ينفع ان اعده بالفراولة المجمدة اذ لابد من الطازجة
فأعددته بالكيوي وانتم طبعا لو تريدون تطبيقه فيفضل
تطبيقه بالفراولة لو متوفرة
عشان تتذوقن الطبق على اصوله
المقادير (بالاكواب القياسية)

125 غ لوح شوكولاتة خام قليلة السكر او نصف حلوة

100 غ زبدة بحرارة الغرفة (نصف كوب)
اربع بيضات بحرارة الغرفة
ربع ملعقة صغيرة من الملح
كوبين من السكر الناعم
ملعقة صغير فانيلا سائلة
نقطتين من الخل الابيض
كوب من الدقيق المنخول
للزينة
كوب كريما خفق مع ملعقة كبيرة من السكر الناعم ورشة فانيلا
نخفقهم مع بعض حتى تتكون الكريمة
وتترك في الثلاجة الى وقت تقديم الطبق
نصف كيلو من الفراولة الطازجة او الكيوي الطازج
صينية الكب كيك واوراق الكب كيك الخاصة
الطريقة
قبل البدء بعمل الكيك نقوم بتشغيل الفرن
على درجة حرارة 180 درجة على الرف الاوسط
نقوم بتجهيز الشكولاتة

وذلك باحضار وعاء عميق نضع الشوكولاتة مع الزبدة ونذوبهم بالمايكرويف او على حمام مائي
( انا هنا استعملت الحمام المائي)

نخلطهم جيدا مع بعض الى ان تذوب الشكولاتة تماما
ونتركه قليلا حتى يبرد
ان ان نقوم بتجهيز مقادير الكيكة كما في الصورة

في وعاء عميق نضع البيض
ونضع معه ربع ملعقة الملح والملعقة الصغيرة من الفانيلا
ونقطتي الخل ونخفق على سرعة عالية
حوالي الدقيقتين حتى يصبح البيض مائل للبياض

عندها نبدأ بإضافة السكر البودرة تدريجيا مع متابعة الخفق حتى تنتهي الكمية كاملة
عندها نبعد المضرب ونستخدم الملقعة الخشبية
نضيف مزيج الشكولاتة الى الخليط
مع التحريك ببطئ الى ان تمتزج الشكولاتة
ثم نضيف الدقيق بهدوء مع التحريك بخفة
الى ان تمتزج المكونات جيدا
مع ملاحظة عدم الخلط بقوة وبخشونة
لاننا نحتاج الى الهواء الموجود في خليط البيض

نوزع ورق الحلويات في طاجين الكب كيك
ونصب فيه المزيج بحيث ان لايزيد الخليط عن نصف الكوب

نضع الطاجن في الفرن لمدة تلث الى النصف الساعة
ولا نريد ان يظل في الفرن لمدة طويلة
لاننا نريد ان يظل البراونيز محتفظا برطوبته
مع النضج التام له
اي انه كيك ناضج ولكن محتفظ برطوبته
نخرج البراونيز من الفرن
ونتركه حتى يبرد قبل ان نخرجه من الورق
ويكون شكله كما في الصورة تماما

في هذه الاثناء نقطع حبات الكيوي او الفراولة شرائح
ونرش عليها حوالي ملعقة ونصف سكر ناعم
ونخلطها ونضعها جانبا
او نتركها بدون سكر لمن لا يحب الحلاوة الزائدة كما فعلت انا

نضع في صحن التقديم قطعه من كيك البراونيز
بعد ان تكون قد بردت ونزعنا عنها الورق
نضع فوقها الكريمة المخفوقة وبعض قطع الكيوي او الفراولة
ثم نضع قطعة اخرى من كيك البراونيز بشكل عكسي فوق الكريمة
وبواسطة القمع نضع الكريمة فوق القطعة الثانية
ونزين الطبق بالفاكهة المستخدمة والكريمة كذلك
