السلام عليكم و رحمة الله و بركاته
أقدم لكم بوريك نصف القمر ( half moon borek ) و هو عبارة عن بوريك تركي
و طعمته في غاية الروعة و الريحة يا عييييني و كذلك انه مفيد جدا
و الحقيقة من يوم ذقته و عرفت اطبقه في بيتي خلاص اعتمدته عندي في البيت
مقادير عجينة البوريك :
2 كوب دقيق اسمر ( دقيق شعير و اللي تحب الدقيق الأبيض عادي يجي بيه ... لكن الدقيق الأسمر بنته احلى )
ثلاثة أرباع الكوب ماء دافئ
ملعقة صغيرة خميرة
ملعقة صغيرة ملح
نقوم بنخل الدقيق في وعاء و نضع عليه الخميرة و الملح ثم نضع الماء الدافي بالشوية حتى تتكون
لدينا عجينة طرية لا تلتصق باليد ... ممكن زيادة الدقيق لو حسيتي انه العجينة قاعدة تلصق في ايدك ...
و كذلك ممكن زيادة الماء الدافي لو حسيتي انه العجينة يابسة و مش مرنة.
نغطيها و نخليها ترتاح لمدة ساعة
أثناء هذه الساعة نجهز الحشو:
بصلة مفرومة ناعمة أو مقطوعة جوانح
ملعقتين صغار زيت زيتون
ربطتين سبانخ أو سلك
كوب جبنة فيتا أو اي نوع جبنة تحبينه
كمية قليلة من المعدنوس المفروم
القليل من الفلفل الأسود
القليل من الملح
نقوم بتدبيل البصل في زيت الزيتون على النار و نقوم بعصر اوراق السبانخ أو السلك حتى نتخلص
من الماء كليا ( يمكنك تدبيلها ايضا مع البصل راح تعطي طعم يمي يمي )
أنا هنا استخدمت السلك طازج و لم أدبله .. حتى أتماشى مع الوصفة الأصلية
ثم نخلط البصل المدبل مع السبانخ أو السلك و جبنة الفيتا و المعدنوس و الفلفل و الملح

و بعد أن ترتاح العجينة لمدة ساعة ... نقوم بعمل أقراص منها

ثم نأخد قرص منها و نقوم برش القليل من الدقيق عليه حتى يسهل لنا حله بالعصا

ثم نقوم بثنيه على اثنين بطريقة خفيفة

ثم نفتحه ... راح يتكون لنا خط في نصف العجينة
و من هذا الخط سمي البوريك بنصف القمر

ثم نأخد جزء من الحشو و نضعه على احدى الجزئين الذي يفصله الخط

ثم نقوم بتسكيره

و نقوم بإزالة الجزء الزائد بآلة فطع البيتسا

و عندما ننتهي من المجموعة كلها .... نقوم بتسخين الطاوا على النار و نضع القطعة الأولى و نتركها حتى تتحمر من تحت
و بعدين نقلبها على الجهة الثانية ... حتى نتأكد من نضجها من الطرفين

و نقدمها دافئة

و كذلك ترجع التسمية لهذا البوريك على شكله ... لأنه نصف دائرة
