هذه مشاركتي المتواضعة في مسابقة الاطباق التراثية الربيعي


المقادير

حسب افراد العائلة بالنسبة لي استخدمت مقادير شخصين


لحمة خروف أو اي نوع مفضل

خضار مشكلة حسب المتوفر انا استخدمت >>

حبة بصل متوسطة

حبة طماطم أخضر متوسطة

حبة جزر

بازيلاء

فول أخضر

حبة بطاطا متوسطة

حبة باذنجان متوسطة

حبة فجل

حبة لفت

فلفل أخضر حار حسب الرغبة

قرع أحمر (يقطين) >> انا استخدمت قطعة واحدة فقط صغيرة لأني ما احبها

حمص حسب الرغبة >> انا استخدمت حمص ناضج ثلاثة ارباع النضج

حبق وشبت وممكن استخدام معدنوس

شرائح فلفل أخضر حلو مقلية بقليل من الزيت للزينة

وطبعا لو كان متوفر بصل أخضر تطلع ولا أحلى

وطبعا كسكسي حوالي كوب ونصف او كوبين

طماطم معجون ملعقتين أو حسب النوع الي عندك

ملعقة كبيرة ملح - ربع ملعقة صغيرة من كل من : ففل أسود - كركم (بزار) - زنجبيل مطحون

فلفل أحمر حار



الطريقة

نضع القليل من البصل حوالي ملعقة ونذبلها في الزيت قليلا

ثم نضع اللحمة معها ونشوحها على النار حتى يتغير لونها

ثم نضيف لها القليل من الماء حوالي فنجان ونتركه يغلي قليلاً


ونجهز الخضار بتنضيفها جيداً

ثم نقوم بقطع الخضار الى قطع متوسطة الحجم أما البطاطا والباذنجان فتقطع الى نصفين


بعد ذلك نضع البازيلاء والفول الأخضر والحمص ( النيء طبعا انا وضعتها في الطنجرة وقت وضع الكسكسي فوق النار لأنه كان شبه ناضج)


ونشوحهم مع اللحم في الزيت فقط ونحرك ثم نضيف الجزر واللف والبطاطا واللفت ونحرك

ثم نتبل الخضار بالملح والفلفل الاحمر والاسود والكركم ثم نضيف معجون الطماطم

ونضيف لهم القليل من الماء ونتركها تغلي حوالي 5 دقائق

ثم نضيف لها كمية من الماء ثم نضع الباذنجان والبصل


ونتركها تغلي حتى ينضج اللحم والخضار

أثناء نضج اللحم والخضروات نغسل الكسكسي مرتين بالماء ونصفيه

لتتشرب حباته الماء وتنتفخ



وعند اقتراب نضج الخضروات نضيف لها قطع القرع الاحمر وتترك لتغلي قليلا

عندما نضجت الخضروات اضفت لها الحمص المسلوق مسبقا

و نضع الكسكسي في الكسكاس فوق الطنجرة ( يتبوخ )حتى ينضج

عند نضج الكسكسي نرفعه من على النار ونضيف للمرقة الحبق والشبت المفرومين

ونطفيء النار تحته ثم نضيف الحرارات أو القرفة حسب الرغبة ونحرك بحذر حتى لا تنهرس الخضراوات



نقوم بتسقية الكسكسي بالمرقة جيدا ثم نضعها في صحن التقديم

ونورزع عليها البطاطا والباذنجان والقرعة واللحم

ثم نورزع باقي الخضروات فوقها ونزينها بشرائح الفلف الحلو المقلية

وهذا غذانا اليوم اتفضلوا حبوبات

مع سلطة مشكلة وعصير الجزر بالبرتقال للحبوبة زوبة
