صباح/مساء الزهور

امس كان غذانا حاشه عيونكم حوت جي في خاطري حوت مشوي بعد ماشفت الحبوبات ومشاركتهم للشواء والبور ديم فقررت اني اندير حوت مشوي بطرقة امي الله يطول في عمرها لكن للأسف مش علي الفحم ولا الحطب ولا بورديم
وطلع طعمه روعة اللي اتجربه اكيد حايعجبها وتوه الي المقادير


مقادير الارز بالصلصة

4 _5 م ك زيت زيتون
5_6 ضرس ثوم مهروس
م ص كمون
2 م ك طماطم معجون
م ص فلفل احمر بودره حار
ربع م ص كركم
نصف م ص فلفل اسود
ملح حسب الرغبة
سمك مقطع بعدد افراد الاسرة
م ك ريحان مفروم
م ك خل
2 كوب ارز


الطريقة


يوضع الزيت علي النار وتضاف الثوم ويقلب ولا تتركي الثوم يتغير لونه
يضاف الكمون ويقلب جيدا

يضاف الطماطم ويقلب ويترك 3_4 دقائق

يضاف الفلفل الاحمر والاسود والكركم والملح ويترك قليلا علي النار مع التقليب

يضاف مقدار من الماء ويترك ليغلي

عندما تتسبك الصلصة قليلا ويقل المرق تضاف قطع السمك

يترك يغلي حتي تنعقد المرق(تتسبك)
يضاف الريحان وتترك 3 دقائق

يضاف الخل وتطفيء النار والهذف من الخل تقليل حموضة الطماطم وايضا يعطي طعمة لذيذة للسمك

يغسل الارز وينقع في ماء ساخن جدا مع ملح وم ك زيت لمدة ربع ساعة
يصفي ويوضع في حلة البخار(الكسكاس) ويترك حتي ينضج

يبتبث (يحبب) الارز بقليل من المرق ويقدم مع الصلصة

مقادير السمك المشوي والخضار

سمك خاص بالشواء حسب عدد افراد اسرتك (انا استعملت سمكة كبيرة تكفينا لان عائلتي صغيرة)
6_7 ضرس ثوم مهروس
ملح حسب الرغبة
بشر ليمونة ك مع عصيرها
ربع م ص كركم
ربع م ص فلفل اسود
ربع م ص فلفل احمر بودره
م ص طماطم معجون
3 م ك زيت
م ص كمون


الخضار

حبةكوسا ك مقطعة شرائح طوليا
حبة بادنجان ك مقطعة شرائح طوليا
2 حبة طماطم ك مقطع شرائح طوليا
4 قرن فلفل حار مقطع علي اثنين ومنزوع البذور( انا تتركت 2 بدون تقطيع)
فلفل رومي اصفر مقطع الي 2 طوليا (انا نسيت استخدمه من انشغالي بالتصوير)
ملح
فلفل اسود
ربع كوب خل
3 ضرس توم
ز2 م ك زيت زيتون


الطريقة

تفتح السمك وتخلط جميع مقادير التتبيلة جيدا
يدعك السمك بالتتبيلة ويترك بالثلاجة 6 ساعات او ليلة كاملة

ترش الخضار بقليل من الملح والفلفل الاسود وزيت
يوضع السمك مع الخضار علي الشواية ويشوي من الجهتين

في طبق ص يخلط الخل والثوم وزيت الزيتون وقليل من الملح والفلفل الاسود
يسكب علي الخضار عند التقديم

مقادير الشربة


4 _5 ضرس ثوم مهروس
م ص كمون
ربع كلغ جمبري صغير (لا تستعملي الكبير غير مناسب للشربة)
ربع كوب حمص
م ك طماطم معجون
م ص فلفل احمر بودره حار
ربع م ص كركم
شربة لسان عصفور اوالدشيشة (انا استخدمتها)
نصف حزمة ص بقدونس(انا ماكان عندي استخدمت المجفف)
م ص نعناع ناشف


الطريقة


يوضع الزيت مع الثوم علي النار ويقلب بدون تغير لون الثوم
يضاف الكمون ويقلب جيدا

يضاف الطماطم والفلفل والكركم والملح ويقلب ويترك 5 دقائق علي نار هادئة مع التحريك

يضاف مقدار من الماء ويترك ليغلي حتي ينضج الحمص

يضاف قليل من الماء ويترك ليغلي تضاف له البقدونس وحبات الشربة

يترك ليغلي حتي تنضج حبات الشربة او الدشيشة
تضاف النعناع ويترك لدقيقة وتطفيء النار وتقدم

ام نسيت اهم شي لابد ان اقدمه في اي اكلت سمك ولا استغني عنه يعطي طعم رهيب حتي مع الارز بالسمك

اخلط 2 م ك طحينة مع 2 م ك زبادي وضرس ثوم مهروس وعصير نصف ليمون وملح وفلفل اسود وقليل من الماء وتمزج المواد جيدا و اضيف م ك بقدونس مفروم طبعا انا استعملت المجفف
