[الفطيرة] من مطبخ kittygago

[kittygago]

السلام عليكم و رحمة الله و بركاته

اليوم اقدم لكم فطيرتي المعتمدة في البيت

نبدأ بسم الله

المقادير

للعجين:

كوب ماء دافئ
ملح
ملعقة كبيرة زيت
ملعقة كبيرة زبدة سائحة
شوية سكر
ملعقة كبيرة خميرة
دقيق

للدهن:

زيت + زبدة سائحة أو زيت + سمن سائح


الطريقة

نقوم بتدويب الخميرة في الماء الدافئ مع شوية سكر و نخليها لين تتفاعل الخميرة

ثم نضع جميع المقادير و نضيف الدقيق حتى نتحصل على عجين املس ناعم

و نتركها حتى تخمر 3 اضعاف

نجهز مواد الدهن

انا استخدمت هنا الزيت و الزبدة السائحة

و نحضر ورقة و نقصها على شكل دائرة

ثم نأخد العجين و نقطعه الى قطع صغيرة و نضعه على سطح مدهون بالزيت حتى لا تلتصق العجين

ثم نأخد بالقطعة و نقوم بفردها باليد و بواسطة خليط الزيت و الزبدة و كلما فردنا فيها كلما وضعنا زيادة من خليط الزبدة و الزيت

ثم نقوم بلفها مثل السويسرول

بعد لفها نأخدها و نلفها على ثلاثة اصابع من يدنا حتى تنتهي اللفة (البنصر و الوسطى و السبابة)

ثم نأخد الطرف الأخير من اللفة و نضعه داخل اللفة في الوسط و نحاول نطلعه من الجهة الثانية .... يعني كأنك تربطي في حاجة و نهاية الطرفة تحطيه داخل اللفة و اطلعيه من الجهة الثانية

و هكذا حتى تكملي كل القطع

ثم نقوم بأخد اول قطعة قمنا بلفها ... لأنها أكثر وحدة ارتاحت في المجموعة و راح تساعدك في الحل

و نضعها على الورقة

و نضع عليها خليط الزيت و الزبدة و نبدأ بحلها بيدينا على حسب حجم الدائرة

و ندهنها بالخليط و نقوم بتسخين الطاوا و وضع الفطيرة بالورقة

و بمجرد ما تسخن الفطيرة و تبدأ مايلة للنضج .... راح تنفك عنها الورقة بسهولة

و نتركها حتى تحمر من تحت و من ثم نقلبها على وجهها الآخر

و عندما تتحمر من الجهة الثانية نضعها في صحن و نغطيه
و هكذا حتى نكمل كل المجموعة

و كلما نضجت واحدة قومي بدهنها بقليل من خليط الزيت و الزبدة و ضعيها تحت الفطيرة التي جهزت قبلها و غطيها

و هكذا راح تضمني طراوتها
